Both T2 sentry and T2 heavy drones are perfectly fine for missioning, and I've seen folk use both to good effect. That said, sentry drones are generally considered superior for non-AFK mission running because (1) they apply damage instantly, without having to fly to the target; (2) they can be scooped up if they get aggro; (3) they benefit from dps rigs, unlike heavy drones.
Turrets in general, and hybrids in particular make up a fairly small portion of a Dominix's effective dps. Rails have awful tracking, and relatively poor dps, and the Dominix can only mount four of them if using sentries without sacrificing drone range. Blasters are problematic because many NPCs will orbit beyond their useful optimal range. I would imagine that a blaster PvE Dominix would use heavy drones, a web, and a MWD/AB to get into range and apply damage or something. It's possible to use artillery, but four or five unbonused artillery turrets are not going to add much real dps.
The Damage Control should be dropped in favor of another hardener or cap module when you're comfortable with using the Dominix, or when you are able to use T2 hardeners. If you are constantly relying on a Damage Control when running missions, there is something wrong with either your setup or your tactics.
For rigs, I would suggest two Large Capacitor Control Circuits, and a Large Sentry Damage Augmentor. With decent capacitor skills, you should be able to achieve de-facto cap stability. It's more forgiving than fitting two Large Sentry Damage Augmentors, but still provides quite a nice boost to dps. You might have cap issues when using two Large Sentry Damage Augmentors, and dps issues if using three Large Capacitor Control Circuits.
A sentry (and to a certaine extent a heavy drone) Dominix pretty much has to be armor tanked, since it's built around two Omnidirectional Tracking Links, which take up mid slots. With two Omnidirectional Tracking Links, a Garde II can hit close-orbiting cruisers, while a Warden II can snipe frigates from beyond a Dominix's natural lock range, and I've heard that heavy drones can dispatch frigates without too much difficulty.
T2 drones are the first thing to go for after getting a T2 tank on a Dominix if you plan to stick with it, much the same way that T2 guns or missiles are probably the first thing to go for on another missioning ship. T2 drones are vastly superior to their T1 counterparts, especially T2 heavy and sentry drones. Sentry drones take a bit less time to train for, since Sentry Drones V unlocks all T2 sentry drones, but they're all quite good.
With all that said, in the end you should go with whatever you're comfortable with, and whatever works best for your own style. There isn't really a 'right' way to fit a Dominix past a certain point.
